Chocolate Chip Cookies

These cookies are a favorite in our house.


The butter, sugars, eggs, corn syrup, and vanilla have been beaten until light and smooth - about 3-4 minutes.
The flour, salt, baking soda, cinnamon, and ginger have been sifted together and set aside. And the 2 cups of chocolate chips have been measured and sampled set aside.










Everything mixed together and ready to roll into balls.






















Refrigerate in an airtight container.




















Out of the oven and cooling . . .























All the ones that didn't get eaten warm from from the cooling rack go to the cookie jar.






















Sift together and set aside:
2 1/4 cups all purpose flour
1tsp baking soda
1/4 tsp salt
1tsp cinnamon (optional)
1tsp ginger (optional)
(the recipe works just fine without these spices but the cinnamon and ginger lend a nice warmth and balance to all that sugar, butter and chocolate)

Beat together in order, beating thoroughly after each addition:
1cup butter (room temp is best for mixing)
2/3 cup white sugar
2/3 cup brown sugar
1 whole egg + 1 egg yolk (room temp is best)
2 Tblspn corn syrup (I use a dark corn syrup)
1 Tblspn vanilla extract

2cups chocolate chips (I've also used a combination of oatmeal, raisins, skor bits, nuts - all worked really well)

Mix the dry ingredients separately from the wet ingredients and then combine them both briefly until just mixed. The chips and other extras go in last. Roll the dough into 1inch balls and refrigerate for about 2 hours before baking. You can shorten this time by putting them in the freezer for 30min and then the fridge for 30min. Either way the dough should be cold when it goes into the oven that way the cookies hold their shape better. Place dough balls 2 inches apart on cookie sheet lined with parchment paper so they don't stick. Bake for 10-12 minutes at 350 degrees.

Those sound just amazing--I love the addition of the spices to the traditional chocolate chip cookie. I just may have to dig my apron out of storage this weekend to try my hand at them. Thanks for sharing!

The added spices make the cookies taste like a mug of hot chocolate - quite delicious! I hope you get a chance to do some baking this weekend :)

I hope these work for you too! I gave up on making choc chip cookies from scratch a long time ago but after finding this recipe last year I'm back in the game. I think it's the addition of the extra egg yolk, corn syrup, and refrigeration that makes all the difference. They're chunky, dense, and chewy with a bit of crispness around the edge.
